Breakfast Burrito
Jan. 12th, 2004 09:44 amI just made the world's yummiest breakfast burrito. Here's the recipe:
3 T fresh salsa
2 eggs
1 tortilla
1 T butter
salt, pepper
Konriko jalepeno salt!
Add butter to frying pan. Cook salsa over low medium heat (add salt and pepper to season salsa) in half the butter. Reduce salsa until liquid separates from it; drain most of the liquid off. Coalesce salsa into the center of the pan and add remaining butter. Break two eggs into the pan over the salsa and season them with salt and pepper. Warm a tortilla in another pan on low heat, flipping occasionally. Cook the eggs over easy to over medium, then plop them into the tortilla. Add a little dash of Konriko to your burrito, and voila!
Atkins friendly, veggie friendly, and tasty as all get out.
