Sauteed Spinach and Garlic

4 T grapeseed oil
3 T garlic
pinch white pepper
2 pinches ginger
salt & pepper
3 cups baby spinach

Bring the oil to low medium temp.
Add garlic and spices and "bless" the oil.
Add the spinach, and toss lightly until wilted.
Add a little more salt to the spinach about halfway through wilting.

OMG, it's so delicious.


Also, bonus vegan sandwich recipe!

2 slices multi-grain bread
3 slices Tofutti cheese
3/4 cup baby spinach leaves
3/4 cup hummus tahini
1 1/2 T vegan parmesean cheese

Blessing is just a term for lightly sauteeing garlic in oil (not browning it at all, just lightly cooking it), so that the oil takes on the flavor of the garlic.

iam starting to get into spinach, so i should try those recipes. but i would leave out tofutti cheese, i rather enjoy the real thing! does tofutti cheese taste like real cheese?

Tofutti cheese tastes close to or slightly better than the Kraft type cheese you get in individual slices. I definitely like real cheese better, but I've just been cutting down on dairy in general. These days when I'm having real cheese, I just want to enjoy the cheese on its own with crackers or in a grilled cheese sandwich or on nachos or whatever. :)

The spinach and garlic recipe came out AWESOME. I totally have to make more.
